These candies taste like dark chocolate coconut candy and they are delicious. You can squelch that screaming sweet tooth and not feel guilty at ALL!
1 cup of extra virgin coconut oil
1/2 cup plus one tbsp. of cocoa (the more cacao, the healthier)
1/4 cup raw, unfiltered honey
1/4 tsp vanilla extract
Dash of salt
If your coconut oil is in a solid state, put half in your blender and heat the other half on the stove until it’s liquid then add it to the blender. Mine was already in the liquid state so I put the entire cup of coconut oil right into the blender. Add the rest of the ingredients to the blender and blend until everything is mixed well.
Pour the liquid into candy molds and place in the freezer for approximately 30 minutes or until they have hardened. It’s best not to move the molds once you’ve poured your liquid in so place the molds on a baking sheet first. Then, move the entire tray to the freezer.
When the candy has hardened, pop them out of the molds and enjoy. Store them in the freezer.
Yields 36 pieces of candy that is 1 inch in diameter.
